Project Description

Jellies are clear substances since they are made of fruit juice or a water extract of fruit. Jams, however, contain all or most of the insoluble solids of the fruit because 15 | P a g e whole, crushed, macerated, or pureed fruit is used in their manufacture. Technically, jams and preserves are identical, except the term preserves is used for products containing whole fruit. Gelation of pectin is brought about by the addition of sugar in the presence of acid.
