Project Description

There has been a transition in the structure of diet in the era of globalization, from whole grains, fruits, vegetables, and legumes to a diet that includes more processed food, high fat, high sugar, and fewer vitamins and minerals. In response to the increase in functional foods, food scientists are focused on using low-calorie, high-fiber, low-sugar, and low-fat foods.
