Project Description

Asafoetida, also spelled asafetida, is named after the Persian aza, for mastic or resin, and for stinking, the Latin foetidus. It is a gum which comes from the sap of the ferula species' roots and stem, a giant fennel that exudes a vile odor. Asafetida is a gum that is hard-resinous, grayish-white when fresh, darkening to yellow, red and ultimately brown with age. It is sold as a gum, and more often as a fine yellow powder, often crystalline or granulated, in blocks or pieces.
